Greek Pastitsio from leftovers

Pastitsio is one of the most famous Greek recipes!
Kids and adults love it!
My family loves it!
Yesterday I cooked pasta with meat sauce
and from the leftovers I decided  to cook pastitsio.
The only think I had to prepare was the bechamel!

Ingredients
pasta ( pennes)
meat sauce
1 cup grated parmesan cheese
Bechamel

***

Bechamel (for a medium pyrex)

4 tbsp butter
4 tbsp flour
500 ml milk
 nutmeg
pepper
1 egg
2 tbsp grated parmesan cheese

Bechamel
In a saucepan, melt the butter over medium heat.
Once melt down add the flour to make a roux. Stirring for about 3 minutes.

Whisk in the milk, taking care to break up any roux lamps.
Cooking until thick.

Remove the saucepan from the heat and add the egg, carefuly keeping whisk.
Then add the pepper, the nutmeg, and the parmesan cheese.
Whisk for a minute and set this aside.

Preheat the oven to 375 f.
Mix a scoop of bechamel into the meat sauce.
Get a pyrex and coat the bottom with half of the pasta.
Sprinkle with some grated parmesan.

Pour on all the meat sauce and sprinkle with grated parmesan
and then the rest of the pasta and cheese.

Pour the bechamel on top off all this and bake for 45 - 60 minutes.
 Until the bechamel turns gold.

Remove from the oven and wait for 25 minutes before you cut into it!
You can served with Greek or green salad.
Bon appetit!
